OUT OF THE FRYING PAN, INTO THE COOK-X FRYER

Moffat Cook-X4 - a simple and compact countertop deep-frying solution.

Deep frying is the fast, simple and popular method that every caterer needs. But unless it's the only item on your menu, few caterers need the 'full monty' of floor-standing fryers. For example, sandwich bars, cafes, even gourmet restaurants, often need a quality deep fryer that is reliable, fast to heat, easy to clean, doesn't take up space, fits in a corner and runs off a standard power socket

Moffat's compact countertop Cook-X4 range includes a selection of fryers and accessories. Designed for small-to-medium sized catering installations, the fryers are distinguished by their tough, hardwearing construction, compact size and easy-to-clean designs.

There are three basic fryers in the Cook-X range. All have tough stainless steel construction, lift-out elements and control units for easy cleaning, thermostatic 'oil-ready' indicators, and are supplied complete with stainless steel baskets and dust covers. They all use the standard Cook-X 400mm depth, come in 275mm or 550mm widths for easy and neat counter-top installation, and run on standard 13amp power.

In addition Moffat offers a range of fryer accessories, including a basket station, holding stations, a doughnut kit and an oil filter.

The X4F1 is a single-pan model with a 5 litre capacity. Its 3kw element is capable of frying up to 7kg of chips per hour, with excellent heat recovery. The X4F2 has twin 5 litre pans to allow for larger production or frying contrasting types of products. With twin power leads, it's also ideal for restaurants or fast food outlets that vary between busy and quiet periods, since one pan can be switched off when not required.

The X4FF model has a larger single tank, accommodating twin frybaskets or a single large frybasket. With a capacity of just 8 litres this is ideal for sites with bigger frying needs, suitable for larger fish or doughnuts, say. The X4FF features a solid element plate that eliminates the problem of excess crumb or batter clogging up heating elements.

For holding the cooked product Moffat offers the matching Cook-X Chip Scuttle, a heated chip holding station complete with drain plate and double-hinged cover. Using an economical 350W element and with variable heat control it can hold up to 2.2kg (5lbs) of chips or other product in hot ready-to-serve condition for up to 30 minutes.

For holding prepared product in the basket before frying, there's the X4BS basket station, essential during busy periods. Supplied with a heavy duty basket, it comes complete with a removable drip tray and can accommodate a spare oil tank underneath the basket or hold two baskets one above the other.

The X4DFK doughnut kit is the ideal (and simple) accessory to convert a Cook-X fryer for doughnut production. Two stainless steel drip trays simply clip to the side of the fryer, and drainage screens catch the excess oil. With the X4FF fryer, 12 doughnuts can be cooked in a single operation.

The X4OF oil filter system allows you to maintain the oil quality in a Cook-X fryer on the go. It features a spare stainless steel oil tank and mesh filter, with a removable drip tray for easy cleaning.

Moffat offer two holding stations - the single-tank X4PH1 and the dual-tank X4PH2, for storing pre-prepared food in peak condition during service before frying. These are ideal for food such as fish, batter or other ingredients. The holding stations use Moffat's Polar Plates, eutectic plates that are pre-frozen to provide a handy, power-free cool storage system at point of cooking. For example, in the X4PH2 chilled fish can be stored in one tank, with batter mixture in the other. Alternatively, three units could be linked together, say to hold fish, batter and breadcrumbs.
